This is a version of an English summer pudding using the cranberries that typically appear in October. If you still can get local fresh cranberries at Thanksgiving, consider this in place of the traditional cranberry sauce.

 

A very simple slaw to use as a counterpoint to spicy grilled meat or as a light side salad.

 

This is the traditional method of serving dandelion greens. For this salad you should find small leaves from plants that have not flowered yet. If you prefer a vegetarian salad, simply replace the bacon with some grated or shredded Parmesan cheese.

 

 

In midsummer, serve this dip with warm flatbread and chilled white wine to people you like.

 

 

You will be disappointed with this salad unless you can find beautifully ripe heirloom tomatoes. The dressing is a tasty orange vinaigrette. It works very well with the fennel. However, you may want to experiment with other vinaigrettes. The technique is outlined in the Appendix.
