Fennel

You will be disappointed with this salad unless you can find beautifully ripe heirloom tomatoes. The dressing is a tasty orange vinaigrette. It works very well with the fennel. However, you may want to experiment with other vinaigrettes. The technique is outlined in the Appendix.
