Chilled Apple Mint Salad
Any apple will work in this salad. Try mixing varieties for added interest.
Serves: 6
1/2 cup plain yogurt
1/4 cup chopped fresh mint
1/2 cup blanched almonds
1/4 teaspoon ground cardamom
2 lemons or limes
6 medium-size apples, cored and diced
1 cup grapes, halved
Zest lemons or limes into a small dish and set aside. Pulse yogurt, mint, almonds, cardamom and the strained juice from the lemons or limes in a food processor. The almonds should be chopped but still visible. Combine yogurt mixture, apples, grapes and zest in a mixing bowl and toss until well mixed. Allow to chill for one hour before serving.
