Alsatian Fried Eggs
Try this for a new twist on breakfast or brunch.
Serves: 4
2 cups prepared sauerkraut
8 to 12 ounces ham steak, slice into ¼-inch thick pieces
4 large eggs
6 ounces brown, cream, or sausage gravy (see Appendix for recipes)
2 chopped green onions
Salt and pepper to taste
Heat the sauerkraut on the stovetop, in the oven, or in the microwave. Pan-fry the ham in a large skillet over medium-heat until warm and lightly browned. Set aside and keep warm.
Fry eggs in butter to desired doneness; salt and pepper to taste.
Place sauerkraut on shallow serving platter. Alternate ham and fried eggs in shingles over sauerkraut. Surround platter with a border of your favorite gravy. Garnish with chopped green onions.
