Brown Butter Corn With Basil
This is a great way to reclaim leftover corn. The butter and basil bring it back to life.
Serves: 4
3 cups cooked corn kernels
2 tablespoons butter
1 cup chopped fresh basil
Salt and pepper
Heat butter in a large skillet over medium-high heat. Continue to heat as butter boils and foams. When the foam subsides, the butter solids on the bottom of the pan should have turned golden brown. Add corn, salt, and pepper. Cook, stirring, for 2 minutes until corn is warm. Remove from heat and stir in basil. Serve immediately.
