Cucumber

Simple Cucumber Radish Slaw
 
A very simple slaw to use as a counterpoint to spicy grilled meat or as a light side salad.
 
Serves: 4
 
Ingredients
1 cucumber, seeds removed
3 radishes
1 tablespoon sesame oil
1 tablespoon sesame seeds
2 teaspoons salt
 
Directions
Grate cucumber and radish with the grater attachment of you food processor or by hand. Transfer to a strainer or colander set over a bowl or plate. Sprinkle with the salt and toss. Let set for 30 minutes to draw the moisture out of the salad. Rinse cucumber and radishes with cold running water, shake and pat dry. Place in a mixing bowl and toss with sesame oil and sesame seeds.
