Sautéed Fiddleheads With Garlic
Serves: 4
1 pound fiddlehead ferns, trimmed and thoroughly washed
2 tablespoons olive oil
2 cloves garlic, minced
2 slices bacon, diced into 1/4-inch pieces
Salt and pepper to taste
Heat the oil in a large skillet over medium high heat. Add bacon and cook, stirring occasionally, until lightly browned. Add fiddleheads and garlic and stir to mix. Cover pan and cook 3 to 4 minutes. Uncover and cook an additional 3 minutes, stirring occasionally. Season with salt and pepper and serve immediately.
