Oyster sauce can be found at any Asian grocery and can often be found in supermarkets. Don’t buy the cheapest one you can find. It might taste like a mud puddle. A good one has a very distinct richness and really adds character to this dish. You also can leave it out of this recipe if desired. I might object, but I likely won’t be in your kitchen.
Serves: 4
Ingredients
12 ounces snow peas
1 cup shiitake mushrooms, stems removed and sliced in ¼-inch slices
2 tablespoons oyster sauce
2 tablespoon toasted almonds
2 tablespoons olive oil
Directions
Heat olive oil over medium-high heat in a large skillet. Add shiitake mushrooms and cook, stirring frequently, for 1 minute. Add the snow peas and cook a further minute. Add the oyster sauce and stir together. When sauce is hot and bubbly, remove from heat and serve. Garnish with toasted almonds.
