Plum and Walnut Crisp
A great way to serve any stone fruit.
Serves: 8
1/2 cup packed light brown sugar
2 tablespoons corn starch
1/2 teaspoon ground cinnamon
2-1/2 pounds sliced pitted plums
2 tablespoons lemon juice
2 tablespoons butter, chopped in small pieces
1 cup sugar
3/4 cup flour
1/2 teaspoon salt
3/4 cup chopped walnuts
1 large beaten egg
Preheat oven to 375 F. Combine brown sugar, cornstarch and cinnamon in a large mixing bowl. Add plums, lemon juice and butter. Toss this whole mess together until well combined and then spoon into a shallow baking pan. Place the sugar, flour, salt, and 1/2 cup of the walnuts in the bowl of a food processor. Process until the nuts are finely chopped. Add the beaten egg and process until just mixed, appoximately10 seconds. Spoon this mixture over the plums. Pull some of the plums up through the batter. Bake until well-browned and bubbling, 50 to 60 minutes. Serve warm with vanilla ice cream.
