Packet-Steamed New Potatoes With Herbs
This recipe is very good with any small or fingerling potato variety. Feel free to substitute any available fresh herb.
1-1/2 pounds new or fingerling potatoes
Salt and black pepper to taste
4 sprigs mint
4 sprigs parsley
1 tablespoon chopped mint
1 tablespoon chopped parsley
Preheat oven to 400 F. Lay a large sheet of foil on a cookie sheet. Grease the foil with pan coating or shortening. Place the potatoes in the center of the foil and liberally salt and pepper. Arrange the herb sprigs among the potatoes. Fold up the sides and then the ends of the foil to form a packet. Seal all the edges. Bake for 40 to 45 minutes until potatoes are tender. Open packet and remove herb sprigs. Place potatoes in a serving bowl and sprinkle with fresh chopped herbs.
