
Salsify

As an alternative to mashed potatoes, this would be perfect alongside a peppered tuna steak.
Serves: 6 to 8 as a side
Ingredients
2 pounds salsify, cleaned and cut into small chunks
1 clove garlic
2-½ tablespoons butter
¾ cup milk
1 tablespoon horseradish
Salt and pepper to taste
Directions
Place salsify and garlic into a saucepan with water. Bring to a boil over high heat. Cook for 10 minutes until salsify is soft enough to mash. Add butter, milk and horseradish. Mash salsify and ingredients together with a potato masher or puree in a food processor. Salt and pepper to taste.
