Buttermilk Mash With Golden Shallots
While this is a mashed potato recipe the shallots are the stars. They bring an unexpected sweet richness to simple mashed potatoes.
Serves: 4
1 pound Yukon Gold or other waxy potato
1 tablespoon butter
3 shallots, halved and sliced into very thin ribbons
1/2 cup buttermilk
Salt and pepper
Peel and quarter potatoes and immediately place in a saucepan of water. Add 1 teaspoon of salt. Bring pot to a boil over medium-high heat. Reduce heat and simmer for 20 to 30 minutes until potatoes are soft. While potatoes are cooking, melt butter in a skillet over medium-high heat. Add shallots and cook about 8 minutes, stirring frequently until shallots are golden brown and soft. Remove from heat and set aside. Drain potatoes in a colander and return to pan. Mash with a potato masher. Stir in shallots, buttermilk, salt, and pepper to taste. Serve hot.
