Spinach Stir Fry With Peanuts
Great with seafood or with a hunk of crusty bread.
Serves: 4
1 pound of spinach leaves
1 tablespoon sesame oil
1 clove minced garlic
1 teaspoon fresh minced ginger
1/4 teaspoon crushed red pepper
1 teaspoon Thai fish sauce
1 tablespoon soy sauce
1 teaspoon sugar
1/2 cup chopped roasted peanuts
Heat the sesame oil in a very large skillet or wok over medium-high heat. Add the garlic, ginger, and crushed pepper. Stir immediately to keep the garlic from scorching. Cook 20 to 30 seconds and add spinach. Continue to stir and toss until the spinach just wilts. You will have to do this with tongs to hold fresh spinach down to the hot pan. Add the fish sauce, soy sauce, sugar, and peanuts. Stir and cook 1 minute longer. Serve immediately.
