Cheddar Zucchini Gratin
In my native Wisconsin, it might be a state law to add cheddar cheese to every recipe. Here is a salute to the motherland.
Serves: 4
2 cups sliced zucchini
1-1/2 cups sliced mushrooms, any type
1 medium onion, sliced into rings
1 cup shredded sharp cheddar
2 tablespoons bread crumbs
Salt and pepper to taste
2 tablespoons chopped fresh basil
Preheat oven to 350 F. Arrange zucchini, onions, mushrooms and 3/4 cup of cheese, lasagna-style, in a shallow baking pan; season with salt and pepper. Top with the last of the cheddar cheese. Cover pan with foil and bake for 20 minutes.
Uncover pan and top with bread crumbs. Return to oven, uncovered, for 10 minutes and top is brown and bubbly. Serve warm.
